Substances which, due to their polar structure, preferably adhere to the interfaces of a disperse system are referred to as interface-active or – somewhat imprecise – as surface-active. Strictly speaking, the term “surface-active substance” only refers to substances that are attached to the “surface” of a liquid (at the threshold to the gas phase), for example on the surface of water.
