Emulsifiers are auxiliary substances which are used to mix two immiscible liquids into a finely dispersed mixture - a so-called emulsion - and to stabilize them. Ionic emulsifiers are subdivided into anionic, cationic and amphoteric emulsifiers according to the nature of the ion-active groups.
